Bread flour and regular flour have the main difference of their protein levels. The protein level in bread flour ranges from 11% to 13%, which is higher than that compared to that of the regular flour. This higher amount of protein is to produce gluten in large quantities, so that the dough can get enough elasticity and stretch.
